Our own fresh herbs on the table
Fresh nettles. Elderflower and dandelion flowers. Home-made spice mixtures. Our regional cuisine predominantly makes use of fresh herbs, mainly sourced from the “Pflegerhof” in Sant’Osvaldo. These have a particularly intense and natural taste thanks to the biological approach of the farm near Castelrotto. Marta Mulser’s Pflegerhof is the top herb farm in South Tyrol and enjoys a good reputation even beyond national borders. Of course, we have our own garden on the Alpe di Suisi, where we try to plant a variety of herbs and flowers every year. The winters here can be harsh and long, so unfortunately not all plants survive at this altitude. But we do have some breakthroughs every now and again. In June 2014, we created our own mint garden with over 20 different types of mint on a sunny terrace. And what do you know: the fragrant young plants are even winter hard on the Alpe di Suisi. We look forward to enjoying a refreshing “Hugo” with fresh mint leaves.
